Pearse Lyons Distillery: Award Winning Whiskeys and Tasting Experiences in a refurbished Church in Dublin Founded by the late Dr. Pearse Lyons and his wife Deirdre, Pearse Lyons Distillery was born out of a personal passion for brewing and distilling, an entrepreneurial spirit and a deep-rooted family connection with The Liberties, Dublin. Pearse Lyons boutique distillery features two unique copper stills, nestled in the sanctuary of the restored historic St. James’s Church and is the perfect blend of history, culture and whiskey. St. James’s Church, which now houses the state-of-the-art Pearse Lyons Distillery, dates to the 12 Century. The church underwent various transformations, before finally being renovated by Pearse and Deirdre Lyons. The Lyons family purchased the site in 2013, with a view to refurbishing the church and returning it to its former glory, with a modern purpose. The Lyons family wanted to ensure the stories from Dublin’s Liberties and the historical significance of the church, its graveyard, the art of whiskey distilling and coopering, were shared and handed down through the generations. Throughout the distillery it is evident to visitors the level of detail that the Lyons family went to in refurbishing this protected monument. The Irish artisan stained glass windows that illuminate the distillery interior depict: the pilgrimage to the Camino de Santiago, also known as “St. James’ Way”; how Irish Whiskey is made; the art of coopering; and the natural ingredients grown for our “uisce beatha” (Irish for “water of life, ” another name for whiskey). In 2019, Pearse Lyons Distillery took home the coveted award for ‘Dublin’s Best Tourism Experience’ bestowed by the Irish Tourism Industry Confederation, highlighting the outstanding experiences that await our visitors. On tour of the award-winning distillery and surrounding graveyard, guests are introduced to the compelling characters from Dublin’s famous distilling and brewing district.
